Cut the papaya into small pieces. Boil the water in a pan and add the papaya pieces in it.
Boil it for 3 minutes, then turn off the gas and leave the papaya pieces in the boiling water for 5 minutes.
After 5 minutes, strain the water and keep the papaya in the strainer.
Take 2 cups of water in a separate pan, add sugar, lemon juice and prepare the sugar syrup like juice (otherwise the pieces will stick together), now add the papaya in it and cook for 1 more minute
Finally add in the vanilla essence and mix well. Now take 4 bowls with different food colours, divide this syrup and papaya in the food colour bowls, let it soak for 12-15 hours.
After 15 hours, strain this sugar syrup and let it stay on room temperature till it is dry. Once it is dried, preserve it in a zip lock bag
